Roast Leg of Lamb with shallots

Ingredients

  • 12 shallots
  • 2tsp salt
  • handful herbs
  • half tsp pepper
  • 1tsp sugar
  • 1 cup merlot
  • 2 Tabs oil

Directions

  1. score fat on the leg

  2. oil the pan

  3. layer rosemary/bayleaf/thyme on bottom

  4. season bottom of leg with half the sugar /salt/pepper

  5. place leg on top of herbs

  6. season top of leg with the other half of seasonings

  7. oil the top of leg

  8. place herbs on top

  9. pour over merlot

  10. cover with foil

  11. put shallots in at half way

  12. baste during cooking

  13. rest at the end

  14. make juices into gravy
